Fatata Recipe: Traditional Malagasy Pancakes

- 1 cup All-Purpose Flour
- 1 cup Water
- 1 Egg
- 1/4 tsp Salt
- 1 tbsp Oil For cooking pancakes
- 1 lb Ground Beef or Chicken
- 1 Onion Finely chopped
- 2 Tomatoes Diced
- 2 cloves Garlic Minced
- 1 tbsp Oil For cooking filling
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Paprika
Make the Pancakes:
In a bowl, mix the flour, water, egg, and salt until smooth.
Heat a non-stick pan over medium heat and lightly grease with oil.
Pour a small amount of batter into the pan and swirl to form a thin pancake. Cook for 1-2 minutes on each side, then set aside. Repeat with the remaining batter.
Prepare the Filling:
Heat oil in a pan over medium heat. Add the onions and garlic, and sauté until fragrant.
Add the ground meat and cook until browned.
Stir in the tomatoes, salt, pepper, and paprika (if using). Cook for 5-7 minutes until the mixture is thick and flavorful.
Assemble the Fatata:
Place a spoonful of the filling in the center of each pancake.
Fold the sides of the pancake over the filling to form a neat packet.
Serve: Enjoy your Fatata warm, with a side of salad or chutney if desired.
